Hi, RT Gooch, here in Peru the word is Cebiche. In other countries use ceviche, but also they don't make the cebiche the way we do it.

I like it and have eaten it in many Spanish speaking countries where I have lived, worked and visited. Nearly every region seems to have their specific variation, but for me, it's all been good. Will be making my first visit to Peru this winter for a couple of months and look foward to sampling all the "fishy" delicacies.
